#2 Dempsey Cookhouse and Bar

Chef Jean-Georges Vongerichten’s flagship store in Singapore, his involvement in every aspect of his restaurants from concept all the way down to staff selection is very apparent here. And when you see him in action in the open kitchen, it isn’t just cooking, it is a performance piece! Start with the signature Egg Caviar, which will quite possibly be the fluffiest eggs you’ve ever had. Then, move on to mains like the Black Truffle and Fontina Cheese Pizza, Tomato Gazpacho, or the Maine Lobster. Order a cocktail while you’re there – the Lychee Raspberry Bellini is really good.

Helmed by Chef Patrick Heuberger and serving up bold flavours with signature French finesse, the menu at Atout draws heavily on classic European dishes. We’re talking an array of cheeses and charcuterie, plus dishes like Angus Beef Ribeye and Duck Leg Confit. If you’re feeling a little adventurous, try the Pig Head Terrine that’s made with the snout, jowls, ears, and other meat found on a pig’s head. After deboning, the meat is brined in herbs and spices for 48 hours and cooked in vegetable stock. After skimming away the fat, the result is a dish that’s high in collagen and served with a light vinaigrette.

Consistently ranked in the World's Top 50 Best Restaurants, almost everything on the menu at Burnt Ends touches the two oven, four-tonne brick kiln designed by Chef-Owner Dave Pynt. It is notoriously hard to get a seat at this Michelin Star establishment with reservations opening 30 days in advance. You’ll be wise to start planning in advance! Clean, contemporary, and healthful foods made with Asian ingredients and techniques – that’s what you can expect at COMO Cuisine. Perennial favourites include the heaping Our Big Raw Salad, which features a guilt-free indulgence of fresh and raw fruits and vegetables. #16 Hathaway

Hathaway in old English means someone who lives by a path across a heath, which describes its location at Dempsey. Like the name, Hathaway’s menu seeks to capture the context of our time and place through the lens of Southeast Asian flavours and crossroads. Indian, Malay, and Peranakan cuisines marry French and Middle-Eastern flavours and since they are all about being inclusive, Hathaway does not serve any pork or alcohol. Its brunch menu includes a Pengat Pisang French Toast – caramelised bananas stewed in coconut milk, served with a scoop of Apom Perkuah ice cream, raspberries and blackberries on brioche, as well as the Straits of Dempsey, which comes with a creamy butter chicken, house sausage, potato latkes, naan, and eggs.
