Toby’s Estate Coffee Roasters traces its roots to Australia, where the brand was founded in 1998 before establishing its Singapore flagship café and roastery in 2011. The Robertson Quay outlet underwent a full renovation in 2024, emerging with an industrial warehouse-style interior of exposed surfaces and clean lines, paired with a riverside terrace that overlooks the Singapore River.

As both a working roastery and all-day dining café, the space brings together specialty coffee sourced through direct farmer partnerships and a brunch-driven food menu built around hearty, produce-forward plates. From the counter to the table, the café’s dual identity as roaster and kitchen shapes every dish and cup that follows.

This all-day breakfast platter anchors the menu with eggs cooked to the diner’s preference, alongside maple espresso bacon, vine tomatoes, roasted mushrooms, baked beans, and pork sausage. The bacon is cured with a maple-espresso glaze, a nod to the café’s coffee-roasting identity carrying through into the kitchen. Diners choose a side of sourdough, brioche, or croissant, with a top-up option for a second bread style.

Baristas offer multiple brewing methods for these single origins, allowing the same bean to be prepared in different ways depending on the flavour profile a diner wants to draw out.
