What Makes It Unique: Li Yuan Mee Pok stands out as Singapore's first Japanese-owned bak chor mee stall selling authentic Japanese fusion mee pok. The brains behind this revolutionary concept is 55-year-old Japanese chef-owner Naoji Kuribara, who left his cushy finance job at a local Japanese company in 2014 to venture into the F&B line after a six-month apprenticeship at Ah Hoe Mee Pok.

Miso BCM
The Food: Their signature Japanese Fusion Mee Pok comes in two variants - Miso and Shoyu - available in both dry and soup versions. The sauce is distinctly different from traditional BCM— it's sweet, creamy and filled with umami flavours, with just the right amount of tanginess and saltiness. The dish features two large slices of Japanese chashu, abalone, meatballs, beansprouts, minced pork, and crispy pork lard.

2. No. 25 Minced Meat Noodle - The Tonkotsu-Inspired Creation

What Makes It Unique: Founded by an ex-Burger & Lobster chef Han and his fiancée Chelsea (former accountant), this establishment offers bak chor mee with tonkotsu-inspired signature soup. Their unique broth is boiled for at least eight solid hours daily with chicken feet, pork bones and secret ingredients, resulting in a lip-smacking full-bodied broth resembling tonkotsu ramen.

The Food: The signature offering features a rich, creamy soup that's heavy on tee poh (dried sole fish), creating a touch of bitterness balanced with strong saltiness. The dry noodles come without vinegar by default but it's available upon request. Each bowl includes generous amounts of minced meat, crispy pork lard, and their famous tee poh slices.
