The rice is made using 2-year-old Thai Jasmine infused with coconut milk and steamed to perfection, while the organic chicken is marinated for 12 hours in a house-made rempah before being fried to order. The result is a bird with deep, layered spice on the outside and tender, juicy meat within — a far cry from the lukewarm wings you’d get at a casual hawker stall. Premium ingredients like aged Thai Jasmine rice, high-quality ikan bilis, and cold-pressed-on-site coconuts are part of what separates this from a typical hawker plate. The Beach Road flagship sits in a whitewashed traditional shophouse with wicker back chairs, banana leaf print wallpaper, and cheerful blue-and-white tiled flooring — a space that feels festive and communal, ideal for groups. There are now three outlets: Beach Road (the flagship), Siglap, and River Valley, so there’s little excuse not to visit. Reservations are strongly recommended, especially for the flagship.
